Fried halloumi and Tamsin arugula pesto
Arugula pesto
- 2 containers of Tamsin arugula
- 1 dl grated Cheddar cheese
- ½ dl toasted pine nuts
- 1 garlic clove
- good quality cold-pressed rapeseed oil
- salt
Measure the ingredients into a blender and blend into a paste. You can adjust the thickness of the pesto with the amount of oil, but be careful not to make it too thin. Serve this time with fried halloumi and toasted baguette. With a lovely fresh salad on the side, of course.
