Ham Quiche or Quiche Lorraine

Ham quiche or Quiche Lorraine is a savory treat suitable for many occasions. You can customize the fillings to your liking and add tomatoes, mushrooms, or other vegetables. Use Tamsin parsley in the filling and garnish with parsley or arugula.

  • 100 g butter
  • 2 dl wheat flour
  • pinch of salt
  • 2 tbsp water or cream

Filling:

  • 200-300 g smoked ham, chopped
  • 2 spring onion stalks
  • ½ yellow bell pepper
  • ½-1 dl Tamsin Parsley, chopped
  • 150-175 g grated cheese
  • 3 dl whipping cream or cooking cream
  • 3 eggs
  • pinch of salt
  • freshly ground black pepper

For garnish:

  • Tamsin Parsley or Arugula

Place the butter in a bowl and add the wheat flour and salt. Rub into a crumbly mixture. Add the water or cream and mix into a smooth dough. Press the dough into a rimmed quiche pan lined with parchment paper. Preferably pre-bake the crust at 225°C for about 15 minutes. Sprinkle the chopped smoked ham, finely chopped spring onion stalks, and diced bell pepper on top. Chop the parsley and sprinkle on top. Sprinkle the grated cheese on top. Mix the whipping cream or cooking cream, eggs, salt, and black pepper together. Pour the mixture into the pan and bake the quiche at 175°C for about 30 minutes or until the top has set and is beautifully colored. Serve warm. Garnish with chopped parsley or arugula.
