Hearty Smoked Salmon Pasta Salad

Hearty smoked salmon pasta salad is easy to make and tastes great for everyday meals and special occasions. You can use different vegetables and fruits according to your own taste. Try varying the cheeses as well. Finely chop aromatic Tamsin Dill and mix it in to finish the salad. Finally, also mix in Tamsin arugula, which is sold in containers.

  • 2 l water
  • 400 g pasta
  • 1 tsp salt
  • 1 red bell pepper
  • 1 dl sun-dried tomatoes, sliced
  • 100-200 g red grapes
  • 400 g cold-smoked salmon
  • 150 g mini mozzarella balls
  • 1 container Tamsin Arugula

Dressing:

  • ½ dl olive oil
  • pinch of salt
  • 30 g Tamsin Dill
  • 50-70 g Parmesan cheese

Bring water to a boil and add pasta and salt. Boil according to package instructions, about 8 minutes, and drain. Rinse pasta with cold water. Finely chop the dill and dice the bell pepper. Mix the ingredients into the pasta along with the sun-dried tomatoes. Add halved grapes or use whole. Cut the cold-smoked salmon into pieces and add. Add the drained mini mozzarella balls and fold in the arugula. Prepare the dressing. Put olive oil, a pinch of salt, dill, and grated Parmesan cheese in a bowl and blend with an immersion blender until smooth. Pour the mixture over the salad and toss. Serve the salad with fresh bread.
