Salad Cups with Green Herb Dressing

Green Dressing

  • 2 dl crème fraîche or full-fat Greek yogurt
  • 20 g Tamsin parsley
  • 20 g Tamsin dill
  • 1 garlic clove
  • salt and black pepper
  • 2 tsp lemon juice or apple cider vinegar
  • 1⁄2-1 tsp honey

Salad

  • 2 pan-fried chicken fillets or approx. 300 g pulled chicken
  • 1 bell pepper
  • 1⁄2 cucumber, diced
  • small red onion or spring onion, finely chopped
  • a few radishes or celery stalks, sliced
  • 1 container Tamsin arugula, chopped
  • remaining parsley and dill, chopped

For Serving

  • Tamsin iceberg lettuce leaves

Blend the dressing until smooth using an immersion blender. Mix the dressing into the salad just before serving. Serve on lettuce leaves, as individual portions, or from a larger bowl.
