Summer Green Pasta Salad with Dill, Arugula, and Lemon Oil

(side salad for four people)

A fresh green pasta salad that tastes like summer! The combination of dill, arugula, fresh peas, and lemon oil makes this salad the perfect companion for grilled food or the star of a picnic.

Salad ingredients:

  • 250 g pasta (e.g., fusilli or penne)
  • approx. 1 dl fresh peas
  • ½ cucumber
  • approx. 1 dl fresh dill
  • 2–3 dl arugula
  • 2–3 scallion stalks

For the dressing:

  • ¾ dl oil
  • juice and zest of ½ lemon
  • 1 tsp honey
  • pinch of salt

Instructions

  1. Cook the pasta: Cook the pasta in salted water according to package instructions. Drain and cool.
  2. Prepare the greens: Slice the cucumber and finely chop the scallion stalks and dill. Shell the fresh peas.
  3. Make the dressing: Mix the oil, lemon juice and zest, honey, and salt in a bowl.
  4. Assemble the salad: In a bowl, combine the cooled pasta, peas, cucumber, dill, arugula, and scallion stalks. Add the dressing and mix well. Let it marinate in the refrigerator for a moment before serving.
